Oh Na Mi's Next Level Korean Eggplant 🍆
Oh Na Mi's Next Level Korean Eggplant 🍆

By Alex Boyce

Let's Oh Na Mi this next-level Korean Eggplant. 🍆 Juicy, steamy eggplant swimming in a spicy, sweet, rich sauce. This sauce tastes like it's been simmering for hours. It's a quick dish, but tickles all the senses. The eggplant and sesame are earthy, but also mouthwatering, and full of flavor.  I can't think of a better way to spice up a bowl of plain white rice.

The tosti is so popular, it could almost be the national dish of the Netherlands. We've Oh Na Mi'd it. You can actually take any 3 cheeses, but my advice would be a young cheese, a stronger/mature cheese, and something creamy. Definitely plenty of butter. This will be the best tosti you've ever had! 👌🏽

If I make rice, I always make way too much. On purpose of course, because I am already thinking about tomorrow's kimchi fried rice! With the amount of kimchi that is in my fridge at all times, there is always half an open jar that is perfect for this recipe. 🍳🍚🥢
